Mediterranean Style Crispy Tofu | Vegan, Gluten Free


1 Tbsp Extra Virgin Olive Oil

3/4 tsp Garlic (fresh, crushed)

1/2 tsp Dried Oregano

1/4 tsp Dried Thyme Leaves

1/4 tsp Sea Salt

1/4 tsp Pepper (fresh)

7 oz Firm Tofu, cubed

1 cup Kale (baby leaves

1/4 cup Brown Rice (cooked)

1/4 Orange Bell Pepper

1 Florets Broccoli (steamed)

1/4 Avocado

1 Tbsp Hummus (plain)

1/4 Lemon Juice (generous squeeze)


  1. In a medium container, add 1 Tbsp oil and crushed garlic.
  2. Add in the dried herbs along with the salt and pepper.
  3. Pour fresh lemon juice, and stir. Add in the tofu cubes.
  4. Shake for a minute or until the cubes are nicely coated with your marinade. Marinate for 24 hours, if you can.
  5. In a large non stick pan, heat 1 Tbsp of oil on medium /high. Gently fry the tofu cubes, rotating gently to ensure all sides have a crispy coating.
  6. Once done, place tofu cubes on a plate lined with paper towel to soak up any excess oil. Set aside.
  7. Fill the base of your bowl with baby kale, followed by 1/4 cup of brown rice, peppers, broccoli, avocado, hummus and the crispy tofu cubes. Finish with a generous amount of fresh lemon juice.
  8. Serve immediately and enjoy!
